Ingredients: 4 cups thick Greek yogurt, 1 cup strawberries sliced, 1/2 cup blueberries, 1/2 cup chopped almonds, 1/2 cup granola, 2 tbsp honey.

Steps: Line a sheet pan with parchment. Spread Greek yogurt into an even layer about 1/2 inch thick. Drizzle with honey and scatter strawberries, blueberries, almonds, and granola over the top. Freeze for about 3 hours until solid. Break into pieces.

Storage Note: Keep frozen in an airtight container. Serve directly from the freezer and do not leave at room temperature for extended periods.

Ingredients: 1 medium cooked sweet potato, 2 large eggs, 1/2 cup black beans, 1/4 cup shredded cheddar, 2 tbsp salsa, black pepper.

Steps: Reheat a previously cooked sweet potato until hot. Scramble eggs until completely set and warm the black beans. Split the sweet potato and fill with eggs, beans, and cheddar. Top with salsa and black pepper.

Storage Note: Cook sweet potatoes ahead and refrigerate them for up to 3 to 4 days. Store cooked fillings refrigerated and reheat thoroughly. *Time assumes the sweet potato has already been cooked.
