Eggs are one of the most practical ingredients I keep available because they cook quickly and work for breakfast, lunch, dinner, or meal prep. They also pair easily with other protein-rich foods such as Greek yogurt, cottage cheese, chicken, turkey sausage, beans, and cheese.
A large egg contains useful protein, but most of these recipes combine eggs with additional ingredients to create a more filling meal. From casseroles and burrito bowls to fried rice and breakfast tacos, these high-protein egg recipes offer much more variety than basic scrambled eggs.
1. Loaded Egg Bake

A loaded egg bake is one of the easiest ways to prepare several breakfasts at once.
Whisk whole eggs with egg whites, cottage cheese, shredded cheddar, cooked turkey sausage, peppers, spinach, and onions. Pour the mixture into a baking dish and cook until the center is completely set.
Once cooled, cut the bake into individual portions. It reheats well, making it especially useful for busy mornings.
2. High-Protein Shakshuka

Shakshuka features eggs cooked directly in a warmly spiced tomato and pepper sauce.
I add chickpeas or white beans to make the meal more substantial. Feta provides extra flavor and protein, while parsley or cilantro adds freshness.
Serve shakshuka directly from the skillet with whole-grain toast for dipping into the tomato sauce and cooked egg yolks.
3. Egg Muffins
Egg muffins are small baked omelets that can be customized with different vegetables, meats, and cheeses.
Whisk eggs with cottage cheese before adding spinach, peppers, turkey sausage, and cheddar. Divide the mixture among greased muffin cups and bake until the centers are set.
Two or three muffins make a convenient breakfast, and a prepared batch can be refrigerated for several days.
4. Spinach and Feta Veggie Omelet

A spinach and feta omelet is a quick meatless meal that works for breakfast, lunch, or dinner.
Cook spinach, mushrooms, and tomatoes briefly before adding beaten eggs. Sprinkle feta over one side and fold the omelet once the eggs are nearly set.
Cottage cheese can be blended into the eggs if you want a softer texture and additional protein.

5. Chicken and Egg Fried Rice
Egg fried rice is an easy way to repurpose cooked rice and vegetables.
I add diced chicken along with several eggs to make it more filling. Use chilled day-old rice because its drier texture helps the grains separate properly in the skillet.
Peas, carrots, green onions, reduced-sodium soy sauce, and sesame oil complete the dish. Leftover meat from these shredded chicken dinner ideas can also be used.
6. Everything Bagel Breakfast Casserole

This make-ahead casserole combines cubed bagels with an egg custard, turkey sausage, spinach, cheese, and everything bagel seasoning.
Assemble it the night before so the bread has time to absorb the egg mixture. In the morning, bake it until the center reaches 160°F and no liquid egg remains.
It is a useful choice for brunch or when several people need breakfast at the same time.
7. Spinach and Feta Frittata
A frittata provides the flavor of an omelet without requiring each serving to be cooked separately.
Sauté spinach and onions in an oven-safe skillet, add whisked eggs and cottage cheese, then sprinkle feta over the top. Start cooking it on the stovetop and finish it in the oven.
Cut the frittata into wedges and serve it warm or cold. It also pairs well with one of these winter salads for dinner when I want a larger meal.
8. Greek Yogurt Deviled Eggs
Traditional deviled eggs can be made lighter by replacing part of the mayonnaise with plain Greek yogurt.
Cook the eggs until the whites and yolks are firm, cool them in ice water, and remove the shells. Mix the yolks with Greek yogurt, a small amount of mayonnaise, Dijon mustard, paprika, salt, and pepper.
Spoon or pipe the filling back into the egg whites and keep them refrigerated until serving.
9. Chicken Breakfast Burrito Bowl
A breakfast burrito bowl combines scrambled eggs with chicken, black beans, rice, salsa, avocado, and cheese.
The bowl contains the familiar flavors of a breakfast burrito without requiring a tortilla. I prepare the chicken, rice, and beans ahead and warm them while the eggs cook.
Finish the bowl with cilantro, lime juice, salsa, or plain Greek yogurt.
10. Poached Eggs with Bacon and Polenta
Creamy polenta creates a warm base for poached eggs and crisp bacon.
Prepare the polenta with milk and Parmesan, then spoon it into bowls. Add two poached eggs and crumbled turkey or regular bacon to each serving.
The egg yolks create a rich sauce when broken into the polenta. Spinach or sautéed mushrooms can be added for more vegetables.
11. Rolled Omelet with Chive Oil
A rolled omelet is prepared in thin layers rather than folded once.
Whisk eggs with cottage cheese or a small amount of milk. Pour a thin layer into a nonstick skillet, roll it toward one side, and repeat with the remaining egg mixture.
Slice the finished omelet and add a small amount of chive oil. Cottage cheese mixed into the eggs increases the protein while helping the layers remain tender.
12. Baked Eggs with Bread and Cheese
Baked eggs with bread combine crisp edges, soft centers, and melted cheese in one dish.
Place torn whole-grain bread, spinach, tomatoes, and shredded cheese in individual baking dishes. Crack eggs over the mixture and bake until the whites and yolks reach the desired safe doneness.
Adding diced ham, chicken, or white beans can make each serving more substantial.
13. Ham and Cheese Egg Crepe Pinwheels
Egg crepes are very thin omelets that can be filled, rolled, and sliced into pinwheels.
Cook a thin layer of beaten egg in a nonstick skillet. Add sliced ham, cheese, and spinach, then roll the omelet tightly.
Allow it to cool briefly before slicing it into rounds. These pinwheels work well for packed breakfasts, brunch boards, or protein-rich snacks.
14. Cottage Cheese Egg White Bites
Egg white bites offer a convenient way to prepare several portions at once.
Blend egg whites with cottage cheese for a smoother texture. Add peppers, spinach, green onions, and cheddar before dividing the mixture among greased muffin cups.
Bake until the centers are completely set. A few whole eggs can be included for additional flavor and color.

15. Cinnamon Roll Egg Bake
A cinnamon roll egg bake combines a sweet breakfast treat with an egg-based custard.
Cut refrigerated cinnamon-roll dough into pieces and place them in a baking dish. Pour a mixture of eggs, milk, Greek yogurt, cinnamon, and vanilla over the dough.
Bake until the center is set, then use a small amount of the included icing. Greek yogurt in the custard raises the protein and balances some of the sweetness.
16. Poached Egg and Cottage Cheese Avocado Toast
Avocado toast becomes more filling when it includes both a poached egg and cottage cheese.
Spread cottage cheese over toasted whole-grain bread, then add sliced or mashed avocado. Place a poached egg on top and season it with black pepper, chili flakes, and a small pinch of salt.
This version combines several different textures while requiring very little preparation.
17. Chicken and Egg Breakfast Tacos
Breakfast tacos are easy to customize with eggs, chicken, beans, vegetables, and cheese.
Warm small tortillas while scrambling the eggs. Add cooked shredded chicken, black beans, cheddar, salsa, and avocado.
Set out the toppings separately when serving several people so everyone can assemble their own tacos.
18. Greek Yogurt Egg Salad Crostini
Egg salad crostini can be served as a snack, appetizer, or light meal.
Chop hard-cooked eggs and combine them with Greek yogurt, a small amount of mayonnaise, Dijon mustard, celery, green onions, salt, and pepper.
Spoon the mixture onto toasted baguette slices shortly before serving so the bread remains crisp.
19. Creamy Egg and Potato Breakfast Jars
This breakfast is built with smooth potato purée and softly cooked eggs served in individual jars or bowls.
Prepare the potatoes with milk and a small amount of butter until creamy. Spoon them into heat-safe serving containers and top with softly scrambled eggs.
Cottage cheese can be blended into the eggs for additional protein and creaminess. Green onions, chives, or a little cheddar make simple finishing toppings.
20. Sheet-Pan Baked Eggs with Chicken Sausage
Sheet-pan eggs are useful when several servings need to be ready at the same time.
Roast diced potatoes, peppers, onions, and sliced chicken sausage until they are nearly tender. Create small spaces in the vegetables and crack the eggs into them.
Return the pan to the oven and bake until the egg whites and yolks are cooked safely. Serve everything directly from the pan with salsa or Greek yogurt.
How I Add More Protein to Egg Recipes
One egg alone may not provide enough protein for a complete meal, so I usually combine eggs with one or two other protein sources.
Useful additions include:
- Egg whites
- Cottage cheese
- Plain Greek yogurt
- Chicken or turkey sausage
- Shredded chicken
- Lean ham or turkey bacon
- Black beans, chickpeas, or white beans
- Cheddar, feta, Parmesan, or mozzarella
- High-protein bread or tortillas
Cottage cheese works especially well in egg bakes, frittatas, omelets, and egg bites because it adds protein without requiring another piece of meat.
Meal-Prepping Egg Recipes
Egg muffins, frittatas, casseroles, egg bites, and hard-cooked eggs are some of the easiest recipes to prepare ahead.
Allow cooked egg dishes to cool before transferring them to airtight containers. Store sauces, toast, tortillas, avocado, and other fresh toppings separately.
For a larger make-ahead menu, egg dishes can be served with high-protein comfort food dinners or a warm bowl from these high-protein chili dishes.
Cooking and Storing Eggs Safely
Raw eggs should be cooked until both the yolk and white are firm unless pasteurized eggs are being used in a preparation designed for softer eggs. Egg dishes such as casseroles and frittatas should reach 160°F.
Refrigerate cooked egg dishes promptly and reheat leftovers thoroughly. FoodSafety.gov provides additional guidance in its official safe minimum internal temperature chart.
Hard-cooked eggs can generally be refrigerated for up to one week, while most prepared egg dishes are best used within 3 to 4 days.
Final Thoughts
Eggs can become much more than a quick scramble. They work in casseroles, fried rice, tacos, bowls, frittatas, baked dishes, sandwiches, and meal-prep bites.
I included both savory and sweet choices so the collection works for weekday breakfasts, brunch, lunch, and simple dinners. By pairing eggs with cottage cheese, Greek yogurt, meat, beans, or cheese, each recipe becomes more filling and better suited to a complete high-protein meal.
